Goldfish Cracker Mac & Cheese Cups

Does anyone else struggle with feeding kids all day every day? It is exhausting, isn’t it? I’ve come up with this super fun and easy snack time treat that should make your kids smile. These Goldfish Cracker Mac & Cheese Cups take Goldfish crackers to the next level! Besides being a delicious snack, they can even be dinner if served with a side of veggies. Goldfish crackers and mac & cheese

Ingredients:

  • 1 cup Goldfish crackers, crushed
  • 8 ounces macaroni, boiled according to package instructions
  • 4 tablespoons melted butter
  • 2 cups grated cheddar cheese
  • 1 large egg, beaten
  • ¼ cup milk
  • ¼ cup sour cream
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper (or more according to taste)
  • ¼ teaspoon white pepper

Instructions:

1. Preheat the oven to 350°F and lightly oil a muffin pan. I used a mini muffin pan to create snack-sized cups that are perfect for small children.

2. Then, in a bowl combine the Goldfish crackers, 1 cup of cheddar cheese, and melted butter. Divide the mixture amongst the prepared muffin cups and press it firmly into the bottom and up the sides of the cups.

3. Next, in a large bowl mix the cooked and still hot macaroni with the remaining cheddar cheese. In a small bowl combine the eggs, milk, sour cream, and seasoning. Stir the milk mixture into the macaroni and cheese mixture.

4. Now, spoon the macaroni mixture into the cups, top every one off with a single Goldfish cracker garnish, and bake for 20-25 minutes.

5. Let the cups cool completely before loosening from the pan and serving.

These are such a simple way to serve a meal you know your kids will like! I like to pair these cups with carrot sticks for lunch or cooked broccoli for a well-rounded suppertime meal. I hope your kids enjoy these Goldfish cracker mac & cheese cups as much as mine do!
